Required Certifications

BASSET

The BASSET (Beverage Alcohol Sellers and Servers Education and Training) program is an important industry credential. Students can include this certification on their résumés. The program is designed to educate sellers and servers of alcoholic beverages on serving alcohol responsibly to stay within the law. Effective July 1, 2015, in order to be in compliance with Cook County and the City of Chicago laws, all students scheduled or working as a student worker for the restaurant class or on-campus event at National Louis are required to become certified. Students enrolled in a front-of-house or banquet service course at Kendall College at NLU will need to provide proof of BASSETT certification on the first day of the class by presenting their certificate to their instructor. Students who do not provide proof of certification on the first day of class may be dropped automatically. Being dropped could result in a reduction of credits hours, which could also affect tuition, financial aid eligibility, and/or visa status. (Courses: KCUL 164, KCUL 161).

SERVSAFE

The SERVSAFE food managers certification is a certification that a food service worker in a management position is required to obtain by the City of Chicago Department of Health. Anyone who works in a food service establishment must have a minimum of food handlers certificate. At Kendall students in Culinary Arts Programs are required to take CUL 110 Sanitation and will have the opportunity to take the food managers certificate. If the student does not receive a passing test score then a student will need to take the food handlers in order to move on to scheduled Kitchen courses. Students that already have a SERVSAFE certificate or from an approved accredited body can speak to their advisor about meeting this requirement.

ALLERGEN

The ServSafe Allergens® Training program is developed by the National Restaurant Association and experts who have direct experience with the risks involved in serving to populations sensitive to allergens. Our connection to the foodservice industry provides insights that help prepare you for difficult situations. All Culinary students are required to take this certification in KCUL 135 Café Production and is required by the City of Chicago Department of Health to all employees that provide food for consumption. 

SEXUAL HARASSMENT Prevention and Certification 

Sexual Harassment Prevention for the Restaurant Industry is an interactive program designed specifically for managers working in food service. Building on the content in the employee program, the Manager edition focuses on the vital role managers play in creating and promoting a harassment-free workplace culture and provides them with the tools they need to respond confidently and appropriately to sexual harassment claims. Developed in compliance with EEOC guidelines, the program takes a frank and modern approach to addressing and preventing sexual harassment in the workplace. The City of Chicago required all employees working in the Food Service Industry to obtain this certification. 

UNCONSCIOUS BIAS Training and Certification

Understanding Unconscious Bias in Restaurants is an interactive program designed specifically for employees and managers working in food service. Developed in conjunction with the Multicultural Foodservice & Hospitality Alliance (MFHA), the course shines a light on this issue with realistic scenarios meaningful to your staff.
