CFS 221 Fundamentals of Nutrition

Prerequisites: GSTR 210

Students will engage in an examination of human nutrition and its relationship to good health and well-being. The relationship of human nutrition to the basic, applied, social, and health sciences is explored. Pertinent dimensions of the scientific research method and its application to reliable human nutrition information is introduced. Illustrations of those factors that influence food security, dietary choices, eating behavior, and appropriate nutritional needs across the life cycle are integrated throughout the course. Emphasis is placed on the functions of basic nutrients within the human body and the outstanding dietary sources that provide these nutrients. Class discussions, group activities, homework, and other learning opportunities explore current consumer issues, nutritional myths, and controversies. Active Learning Experience-Service Learning.
